Kenzeo: First, I wash the lentils real good — two, three times. Gotta get all that dust out. Then I chop up onions and garlic, throw them in hot oil till they turn golden and smell strong. After that, I toss in some chopped tomatoes, let 'em break down a bit. I add my spices — cumin, turmeric, chili flakes, black pepper. I don’t measure, I feel it. Then the lentils go in.
