Yes, there is! In Outlook, you can hide the attendee list by using the Bcc (blind carbon copy) field when sending the meeting request. Add the attendees in the Bcc box, by clicking on 'Options' then 'Bcc'. This way, each attendee will receive the invitation but they won't be able to see the other attendees.
