I'm about to do a long ah reply, be warned. So, basically in my headcanons, Sebastian's family would sometimes call him "Sebby," and though this response has nothing to do with that, if that happened to me, I would trace it back to his origins, and that calling him that triggered his old memories of his family, causing him to think that the player is mocking him, having possibly known that, in which case, it is a completely valid response, due to what I addressed above.
